We wanted to design a delicious, healthy, high-quality chocolate bar suitable for low-carbohydrate, vegan, ketogenic and paleo diets. NoordCode Pure Chocolate ticks all these boxes!
NoordCode Pure Chocolate contains only high-quality fats, from cacao and coconut MCTs (medium-chain triglycerides). The added crunchy cacao nibs give the chocolate extra bite and texture. A 60-gram bar contains just 2 grams of low-GI maple sugar.
Larger producers often purchase pre-processed cacao powder and butter to mix into the chocolate.
With 'bean-to-bar' chocolate, the chocolatier buys the beans directly from the farmers and processes them into chocolate themselves. As a result, the chocolatier has a much greater influence on the flavour and quality of the chocolate. NoordCode 'bean-to-bar' Pure Chocolate is non-alkalized and gently roasted to preserve the beneficial cacao polyphenols as far as possible.
'Fino de Aroma' is a quality mark of the International Cocoa Organization (ICCO), awarded to cacao with excellent flavour and aroma. Only 6-8% of all cacao worldwide is awarded this quality mark. 'Fino de Aroma' cacao is highly suitable for high-quality chocolate where cacao is the main flavouring.
NoordCode Pure Chocolate is made from 'Fino de Aroma' Criollo cacao from the Tumaco region in Colombia (single origin). Just like wine and coffee, cacao also has a unique taste which depends on the region where it is grown. Criollo cacao has a softer and less acidic flavour than other cacao varieties.
The cacao has been tested for ochratoxins and aflatoxins, two mycotoxins that often occur in low-quality cacao beans.
