Larger producers often purchase pre-processed cacao powder and butter to mix into the chocolate. With 'bean-to-bar' chocolate, the chocolatier buys the beans directly from the farmers and processes them into chocolate themselves. As a result, the chocolatier has a much greater influence on the flavour and quality of the chocolate.
Maximum polyphenol content through minimal processing
Cacao beans are naturally rich in polyphenols and other beneficial compounds. The usual processing of cacao beans into chocolate bars reduces the amount of polyphenols. Especially when roasting and alkalizing cacao, many polyphenols are lost.

Cocoa polyphenols for normal blood circulation
Flavanols from cocoa help maintain the elasticity of blood vessels, contributing to normal blood circulation. This effect applies when you consume 200 mg of flavanols from cocoa daily.
We have confirmed through independent testing of our cocoa that one bar of Pure Chocolate contains 798 mg of flavanols. Therefore, you can enjoy the effects of cocoa polyphenols with a bit more than one chunk per day.
Single-origin 'Fino de Aroma' Criollo cacao
NoordCode Pure Chocolate is made from 'Fino de Aroma' Criollo cacao from the Tumaco region in Colombia (single origin). Like wine and coffee, cacao has a unique taste that depends on the region where it is grown. Criollo cacao is softer and less acidic than other cacao varieties.
'Fino de Aroma' is a quality mark of the International Cocoa Organization (ICCO), awarded to cacao with excellent flavour and aroma. Only 6-8% of all cacao worldwide is awarded this quality mark.
No longer certified organic
Until recently, we used certified organic Criollo cocoa from Tumaco – a rare, single-origin “Fino de Aroma” cocoa that excels in taste and polyphenol content. Due to a shortage of this specific cocoa, supply has become irregular and the price has risen sharply.
In our search for alternatives, we found nothing that matches Criollo cocoa from Tumaco. Even without organic certification, this Criollo continues to excel in flavour and polyphenol content.
One advantage of organic chocolate is the peace of mind it offers about pesticides. To offer that same peace of mind, we have our new cocoa extensively tested in an independent laboratory.
Whereas the organic variety was tested for heavy metals, mycotoxins and mould, the new cocoa has also been tested for pesticides.
